Well, this is a video for you because I'm starting a brand new mini series where I visit 10 food spots that are an absolute delicious 10 while being US$10 or less.

The restaurant must not have gotten internationally viral yet.

Now that you know the rules, let me take you to this local spot because this is Tokyo on 10.

This first spot that I'm taking you is super special because I love Wagyu and this place is pure Wagyu heaven.

And the thing is, there's a lot of places that say it's Wagyu this and that, but

And another thing that's super special about this place is that you might know the person on the other side of the door.

Actually, I've been here before and they weren't here, but I think they're actually here today.

This is today's spot, Wagyu Ramen Goku in Shibuya, just up the street on Miya Matsuzaka.

And I'm just walking it through the door now.

He was actually in my day, in the Life of a Japanese Ramen Chef video that I filmed six years ago.

Actually haven't seen him since we filmed the first video, so why Wagyu?

His beef noodle soup received so much positive feedback from his customers that it became quite a popular menu item at his old shop.

Inspired, he spent the next two years on a Wagyu python recipe that would ultimately lead him to opening up this shop.

Oh yeah, it's in English, so I'm gonna go with this one here.

There's also a yuzu one that's under $10, but we'll go with this one right here.

He grills the Wagyu just before it's sliced and used in the ramen as it adds a smoky aromatic flavor.

That's a third Chashu beef shank slowly simmered until it's so tender that it falls apart on its own.

The shop soup is crafted using 100% Wagyu beef it touches.

It took such a long time to perfect the recipe, largely because balancing the natural umami from the wagyu fat was his biggest challenge.

Too much made the broth feel heavy, while too little left it lacking depth.

Through careful trial and patience, he refined it again and again until he found the balance he was looking for.

How long does it take you to prepare the broth?

His rich paithan broth is mixed with coffee, garlic and ginger and a soy based tare infused with the umami from kelp and shiitake.

Uses a custom made medium to thin dry type noodles that it doesn't get overly chewy over time, ensuring the noodles are good until the last bite.

Just look how succulent these red pieces of thinly sliced Wagyu look that smells so delicious.

You can really taste how deep and how much umami this soup has.

The marbling of all of that meat has just kind of melted into the soup like a nice stringy noodle.

And every single bite, you can taste all of that luscious fatty oils.

Almost kind of like a beef jerky texture, but
