    • For my dashi I plan to use in our udon he suggested combining two types of bonito flakes ibuki ideko, a fish often used in sanuki udon and rishiri kelp which is often used in kyoto cuisine plus donkoshi take mushrooms for its elegance apparently combining different umami components enhances the taste and deepens the flavor all made fresh in front of you it's a pretty cool experience and might even be a good souvenir gift for friends and family look at that i got my own custom-made dashi so what's cool about this place too is after you pay they'll give you a number and basically if you want to come back the next time you can just give them this number so if you guys are interested and you want to get the same exact one that we have here is my number so this place behind me is a specialty rice shop let me take you inside next to dashi okume you'll find my favorite rice shop here sumidaya it's a rice dealer in tokyo with a history spanning 100 years the shop sells onigiri on the go a japanese steamed rice and all sorts of other rice blends all made through a traditional rice polishing technique which mills the rice five to ten times in order to maximize its sweetness and flavor also their rice blends are on a different level drawing from their century of rice crafting knowledge the shop tailors their rice blends for different types of dishes such as sushi curry rice balls and even porridge with their selection you'll always have a rice day and i decided to go with her recommendation tuna okay so here we go look at that it even has a little nice marker take a bite oh the rice itself is really good it's not hot it's cooled down nice texture and you can like almost taste like individual morsel you can really taste the umami of the rice the more you chew the more you taste the sweetness oh and this tuna just has so much flavor so sweet and it's delicious it has like a harder texture to it man i really like her recommendation for this tuna now let's keep on going so at this coffee spot right here you can customize your own blend
