One of the hottest restaurants in London right now is Fallow, and

their chefs are making some of our favorite content on YouTube.

So we decided to bring them in today to get their take on Southern barbecue.

Got a giant beef rib, some pork belly, of course, some fatty and lean brisket over here.

No one's going to blame you for going in with your hands.

Some people would think that's burnt, but as soon as you taste that.

That sort of layer of pink that you get through it.

You honestly could finish the whole thing in, like, four bites.

You can taste it's been slow cooked, but it's not, like, falling off the bone.

I like the fact it's still got the texture.

It's got a bit of a bite, but in the best way ever.

Oh, don't even put in the barbecue sauce in it.
