Hey dudes, I'm Hilah, and today on Hilah Cooking we are making a Rizzle Potatoes.

This is a fancy French potato preparation where you get some new potatoes, you boil them and then you fry them in butter so they're delicious and crispy, and what could be easier?

Buying some French fries at McDonald's I guess, so why don't you all just go on and do that.

All right, so we're going to use these little new potatoes, and I like to just peel a strip off around the middle like they do at the Palace Cafe in New Orleans, which is where I first had these, but traditionally you would peel the entire potato.

You can do it either way, but this is a little bit faster obviously, and then you get nice crunchy potato skin and fiber, so your mom will be glad about that.

Once you've got all your potatoes peeled, we're going to parboil them, so I'm going to put them in a pan with enough water to cover them, add a little bit of salt and bring that to a boil, and let them cook for about eight to ten minutes depending on the size of your potatoes until they're just tender, and then we'll drain, and then you put them back in the same pan, so this is technically a one pot meal.

I'm going to add some butter and put the lid back on and cook these over medium heat for about ten minutes.

Kind of shake the pan frequently so you're getting the potatoes rolled around in all that warm butter, and they're finishing cooking in the butter, and they're absorbing all the flavor, and then they're also getting nice and crispy on the outside.

Some more salt and some pepper, and then we're going to add some herbs.

I'm using parsley, dill, and mint, and if you've never tried mint on potatoes, you really should do it.

Get that tossed around, and then you're just ready to serve.

Beautiful brown butter, crispy potatoes, the herbs just, when you throw them in that hot pan, they just like poof up in your face with freshness.
