Hey dudes, I'm Hilah and today on Hilah Cooking we are making strawberries with coconut whipped cream.

Because strawberries and cream are great, can we all agree?

They're the best thing you can eat, unless you're lactose intolerant.

So for the coconut cream, coconut whipped cream, you want to get some full fat coconut milk.

I'm using this little box or whatever, but a can is fine, and you want to make sure that it's full fat.

It's got like 14 grams of fat per serving, and you're like, oh my god, that's too much, but it's fine.

So put it in the fridge for at least eight hours, and then all the fat solidifies at the top, and the liquid will be at the bottom.

So it's actually a lot easier to do with a can, because you can use a can opener, but I'm going to use a knife, and don't look, mom.

I am going to cut the bottom off and pour the liquid in here.

You want to make sure you save the liquid.

And then what's left is this solid blob of coconut fat, so we're going to put that into our mixer, and if you have room in your freezer, then you could chill your mixing bowl and your beaters too, but I don't have room for this giant thing.

So we'll just whip this on high speed until it starts to get some volume, and if you need to add a tablespoon or so of the reserved coconut water, then do that.

Okay, this is fluffing up nicely, and I'm not going to add any sugar, because I like to just let the natural sweetness of the strawberries shine through, but you can add a little bit of powdered sugar, or you can put a little sugar on the berries, and that probably works better.

I did add a little bit of vanilla extract, though.

Let's just go a little bit longer and maybe add a little coconut water.

I act like I'm surprised, but it's not really that magical, but it's pretty cool, and another thing I like about doing coconut whipped cream for desserts is that it stays fluffy like this for a long time in the fridge, like, I don't know, I've left coconut whipped cream in the fridge for a couple days, and it's still good.

All right, so we're going to make a little parfait.

Celebrate the bounty of the harvest, so I'm going to do a little cream in the bottom, some fresh berries, and like I said, you could macerate these in a little bit of brown sugar or regular sugar if you like, a little bit of toasted almonds, and this would be a really good breakfast, actually, if you want to put some granola in there.
