Hello, I'm Brigido Martinez and let's enjoy one day in Cusco.

Cusco is the gateway to Peru's central Valley.

Let's start there to understand the legacies of the land and our ancient Andean culture.

Then we'll bring it back to see how all those threads come together in this modern, vibrant city.

There's nothing like a morning in Cusco in the Soccer Valley.

One of my favorite spots is this place, Maras Cusco, an ancient salt mine which has a beautiful landscape.

Here we have about 3,000 ponds which are connected through underground canals.

And here we are still in the Sacre Valley in Moray.

We are here to meet the warmy group means women.

It's a collective that work on preserving traditions, making textiles, some art pieces.

Here, About two hours away, we're gonna cool off at the Pirai Lagoon.

This is for me the best place to enjoy my day off.

It is in the heart of the Sahara Valley and it is one of our most beautiful and culturally significant places.

Here there are so many layers of knowledge, so many layers of beauty, and

I cannot describe, you know, I mean, like, you gotta be here to enjoy this and enjoy being surrounded by nature.

Now let's head back to the city and see how these influences show up there.

Here we are at the main square in Cusco, La Plaza de Armas.

And we're surrounded by the cathedral church.

This is amazing because it's like having like a buffet with different things and new things and very fresh things.

It doesn't look like a cheese, you know, it looks like a donut.

I love this market because you're able to just grab things, speak to the people and getting to understand, you know, what's behind ingredient with Fatima Strong, beautiful.

It's an amazing neighborhood to just enjoy, to have a good stroll.

There are so many concepts about art and galleries.

And this one which I like the most, it shows Amazonian art.

What is special about this Amazonian art is the patterns.

For me, all these different patterns moving to different directions, by the end, all come together.

Let's end the day in my restaurant and I will show you how I like to bring all these influences to my dishes.

Every single course, like in a tasty menu model, is representing one ecosystem and this is the Sacri Valley ecosystem.

And then when I move to another ecosystem, we.

Which is a bit up in the mountains, where we're getting the kushuras and we're getting the lamp.
