So I've been to Kyoto many times, and if you're anything like me, you know when you come here and you go to some great food spots, they're so, so crowded.

So in this video, I wanted to help you guys get away from the masses while also being able to get some great food.

And this place that I'm gonna be introducing has really, really good accessibility, so I'm happy to show it to all of you.

I'm taking you to Kyoto Tower Sando, hidden just below the base of the iconic Niide Kyoto Tower, and unknown to many, directly connected to Kyoto Station through an underground passage.

And still, at the time of filming this, it's so surprising how little to no lines there are, given that the food is so reasonably priced and rivals the taste of any shops you'd find at many Kyoto traveler destinations, which is why this has become one of my go-to spots after and before getting off the train with its Kyoto specialties.

You can even find a 100-year-old fishmonger shop from Nishiki Market, a tea shop founded in 1875, conveyor belt sushi, bars, Chinese, Korean, this place has it all.

The first floor hosts souvenir shops, the second floor has a workshop-type area, and the basement, B1 floor, is the food hall, and where this Kyoto food adventure begins as I show you some of my top hitters.

What I just love when walking around here is that it's not so crowded, you don't feel like, oh my god, I can't move around, there's just so much space here.

This Kyoto-born ramen shop pioneered tsuke-soba, but today we're gonna be doing something a little bit different.

Let me show you, because I'm excited to have this one.

This shop was founded by a Kyoto-born ramen chef who honed his skills at the renowned

Kyoka Ramen Shop in Tokyo, and the maze-soba I've ordered today is basically ramen noodles served without soup, but rather the shop's signature sauce, a blend of flavorful chicken oil called chi-yu with a sharp soy sauce to pair perfectly with the flavor of the ramen.

This is the maze-soba, which is basically a mix of chicken oil and soy sauce mixed with a little bit of vinegar.

It's a little bit like a soy-sauce mix, with a sharp soy sauce to pair perfectly with the shop's slightly flat, straight noodles.

Kyoto-Kujo scallions are cooked to bring out its natural sweetness and umami.

To finish the dish off, the chef flame-sears the toppings to deepen the flavors while also producing a delightful aroma.

So, quick little story, when I first came to Japan, you know, I would always just get ramen, and I didn't discover maze-soba until like a few years after coming to Japan.

So, if you come here, you can go with the standard.

I think they have like two different pieces of chicken.

One is a char-siu style, and one is like a sliced breast.

So, you're gonna wanna like mix all of this up.

You can smell the garlic just by mixing it.

Looking even heartier and heartier as we go.

The overall taste of this is on the sweet side.

You have like a slight saltiness from the soy sauce.

It almost has like a Chinese kind of food taste, but maybe that's because the garlic is quite strong in this.

The texture of the noodles, they're like thick, flat noodles.

It's nice because it has a good, plumpy texture where you get a little bit of resistance when you bite.

And you gotta have this kujo negi that's all flame-touched.

Because they are using the chiyu, maybe someone will say like it's on the oilier side, but it's nice to have some of this green to kind of freshen it up a little bit.

You got like these four thick pieces of chicken on the side of the meat.

You can see like it's been peppered a little bit or scorched.

Wow, that's a pretty hearty piece of chicken.

So if you wanna get your souffle pancake on, then this is the spot.

This spot makes them irresistible souffle pancakes with its origins in Kitayama, Kyoto, known for its airy and smooth good goods.

It's like a cloud in the sky melting in your mouth.

After ordering, the pancakes are grilled slowly over low heat, which helps create its perfect fluffiness.

The shop uses eggs from Souffle Kaidan in Kyoto and flour from Matsuda Flour Milling Company, both carefully selected for the exquisite quality.

You got matcha ice cream, got some whipped cream.

Ooh, that's a really good souffle pancake.

The sugar content on here is not like so, so out there where, whoa, I'm wired.

And then let me just take some of this ice cream.

Let me throw some of that cream on there this time.

The sweetness just kicks in right there when you mix the matcha ice cream.

What's nice about this is that everything is so mild.

There's not like a really a strong flavor.

In terms of like souffle pancakes and like the overall fluffiness of this, it's pretty fluffy, but there is a little bit of denseness to it.

This thing is so light that I can like finish this quite easily.
