Hey everyone, it's Natasha Natashaskitchen.com. We're cooking up an apricot
dijon glazed salmon. The glaze is so easy and makes every bite of salmon
juicy, flaky and delicious and it's a one pan meal. To start, you'll need
one-and-a-half pounds of fresh broccoli. Cut them into medium florets, then place
them on a parchment lined baking sheet. Drizzle with 2 tablespoons of olive oil,
then season to taste. I used half a tsp of salt and about 1/4 tsp of black pepper.
Toss to combine and bake at 450˚F for five
minutes, just to soften the broccoli. Meanwhile, let's quickly make the glaze.
In a small saucepan over medium heat combine a quarter cup of apricot
preserves, 1 Tbsp of butter, a Tbsp of honey and one and a half
Tbsp of Dijon mustard. Bring to a simmer and cook for one minute stirring
frequently then take it off the heat. Alright, our broccoli has softened and we
need to make space for the salmon so push it off to the sides then place two
pounds of salmon fillets down the center skin side down.
Season the salmon with half a tsp of salt and a quarter tsp of black
pepper or season to taste. Divide the glaze evenly between each fillet,
spreading with the back of a spoon to coat the top and sides. Bake at 450˚F
for six to ten minutes or until flaky and just cooked
through. A thinner fillet will take closer to six minutes while a thicker
fillet can take up to ten. Yes! It is time for the taste test and I cannot wait to
dig into this juicy salmon and before you serve, it's really nice to garnish it
with some fresh chives. Give that a generous sprinkle... that looks good. All
right, and I love serving this with white rice
or quinoa is also a great option. So we're gonna get lots of the broccoli
here, generous amount and I love that there's enough vegetables here to feed a
family. It's a perfect one pan meal. So here we go, get the big one, we're all
about big portions around here. I'm excited! OK, now the taste test. It's so
flaky and moist inside, so juicy and cooked just right. I'm excited!
Mmm-hmm... I love that sweet and savory combination with the apricot preserves
and the Dijon infuses the salmon with so much flavor as it roasts. It just
makes this beautiful glaze and you're gonna love that roasted broccoli. It
cooks to perfection. Salmon and broccoli works so well together. This is such an
easy one pan meal, comes together in less than 30 minutes and it's perfect for a
