  • with Uncle Ben's we are going to give you some tools and tricks and

  • some videos to support you in all of your skills

  • and the food team are going to give you some great tips on how you can kind of pace

  • yourself

  • and the kind of the things you need to choose that will really work on TV

  • I do everything with the food team, whether we're up mountains or in tunnels

  • in Timbuktu, so check them out I'm sure they will be

  • helping you make the best videos ever and don't forget all the details below

  • I wanna see your video. Hi I'm Charlie from Jamies Food Team

  • my first top tip is shopping for

  • fruit and your vegetables so when you're in the supermarkets

  • there's lots and lots of things going on and it's quite daunting but its always

  • worth taking that extra time to find your lovely ingredients

  • for example if you using lemons and your zesting,

  • it's nice to get unwaxed you can get leafy lemons from your grocers that

  • add that extra bit of color

  • you got lovely onions and herbs, you have beautiful

  • salad leaves. You'll find that it changes from season to season

  • So if you can't find an ingredient you like at your local supermarket

  • it's always worth befriending your local greengrocer

  • and just kinda keep up to date with what's in season

  • when it comes to quantities it's always better to buy slightly

  • over what you actually need depending on

  • your budget but at the end of the day it's important that you have more

  • than what you need

  • in case need something goes wrong or your

  • you're doing pack shot or a thumbnail shot at the end

  • that you nered to re do what you've done

  • My next up to it's all about keeping

  • your hero ingredients that you've found at the supermarket fresh

  • So, big thing, herbs these tend to wilt

  • as soon as they're bought and it's a fact

  • kitchen towel, wet it with a bit of cold water

  • this keeps them fresh

  • Literally just toll them up and you store them in the fridge and they will last a

  • good day or so. This baby gem for example it's got a kind of a rough

  • bottom was just being cut off that's been sitting around for quite a while

  • so just trim and automatically go really nice

  • fresh looking baby gem lettuce. Herbs in pots

  • you know that they'll almost a fresh, just bought for one pound fifty or whatever it

  • is

  • And if you put it in a terracotta pot or in a jug or anything that comes to hand it

  • looks really, really nice

  • when I'm on a shoot with Jamie, this is whtat I like to think about. So first of all I start

  • with

  • his empty space. He has obviously a board and a knife

  • salt and pepper utensil jar pots and pans if he needs

  • in terms of the food, if it's meat

  • for example put it on a baking parchment or or a plate

  • rather than its packets it just looks a lot, lot nicer

  • so when it comes to putting your hero ingredients

  • in set and there are lots of different angles here

  • but always go with the prettiest facing out towards the camera

  • We could go with that one its not so nice again

  • you're not really seeing much there, this angle is

  • by far the prettiest you can see the selection that's going on on this plate

  • likewise when it comes to your final dish

  • you want to make sure that your angle that the camera seeing

  • is the prettiest because that is what the viewer will be seeing too.

  • So my next top tip is

  • all about colours not just with your finished

  • article on your plate, but with what your

  • you're presenting as well on set. For example this

  • lovely bowl, it's the prop have the color itself is really, really nice it

  • zings out at the camera

  • lemons chillis limes they all work very well together they're all

  • quite contrasting but complementary colors

  • the same as if you were plating up,

  • cooking a curry or a stew

  • you can't really tell a difference you can't see your chunk of meat to your

  • tomato. it all looks really, very

  • similar. A dollop of yoghurt will work really really well and some

  • lovey leaves if you were, if it was a curry for example coriander

  • scattered over the top maybe some chopped chilli. Try with and try without

  • and you'll see the difference.

  • So my last tip is all about height and texture and movement

  • on a plate for example

  • Say these pears were are final,

  • our final dish. No just

  • it's not just about piling your food up, it's also about the plates

  • and the props that you use, this is quite a big plate, so if I was

  • to place these on here, they would just look a bit

  • lost and a bit sad however if I was to get a slightly smaller plate

  • you can see it's got a slight dip and a nice edge

  • a nice kind of pattern. Pile them up

  • something a little bit different. It

  • draws, it draws the plate of food up

  • to your eye and I think that's really , really important. Remember

  • all this fuss is for one thing to make people want to try
