  • There are few essentials.

  • For success every time make sure you use the right ingredients.

  • I use the all in on method because that's what I get success with and just beat it enough

  • to keep the ingredients together.

  • Make sure you've lined the tin on the base so that you can get it out and bake it at

  • the right temperature.

  • If you put it in too hot an oven you'll find that it will dome.

  • If you cook it at 160 that's about right and it should take between 20 and 30 minutes.

  • To know when it's done, you'll see that it should be a pale golden-brown, shrinking away

  • from the sides of the tin.

  • And when you put your finger in the middle and press very gently, it should come out

  • again.

  • Turn it out carefully and wait 'til it's cold and then sandwich it together with your favourite

  • jam.

  • And a sprinkling of caster sugar over the top.

  • And then you'll have the perfect Victoria sandwich.
