[lauren] from hot for food and today, [lauren] we decided we're gonna set you up [lauren] for going back to school with some sandwich ideas, [lauren] what are you doing? [john] going back to school. [lauren] are they your glasses? [john] yea. [lauren] okay, so yea, you know you're gonna have your glasses, [lauren] cos you're smart [john] yea [lauren] and you're gonna have your backpack, [lauren] and then in the backpack [lauren] you're gonna wanna pack a lunch. [lauren] we're gonna show you how to make an edamame mash sandwich, [lauren] a chickpea tuna sandwich, [lauren] and a curry chik'un salad sandwich. [john] let's do it. [lauren] let's do it. [john] can we take this off then? [lauren] we have a lot of work to do, actually. [lauren] we've never done three things in one video. [lauren] i can't wear these, i have perfect eyesight [lauren] and they make me look, like it's all blurry. [john] first things first, edamame mash. [john] high in protein, [john] beautiful looking sandwich, nice and green and colourful [lauren] so into the food processor you're gonna put [lauren] one and a half cups of cooked, shelled edamame [lauren] one tablespoon of lime juice, [lauren] one tablespoon of vegan mayonnaise, [lauren] two garlic cloves, [lauren] two tablespoons of fresh cilantro, [lauren] and one tablespoon each of fresh dill and fresh mint [lauren] and a quarter teaspoon of ground mustard, [lauren] ground pepper and sea salt. [lauren] so combine all of that in the food processor [lauren] till it comes together really well [lauren] and everything's well mashed together [lauren] you probably need to stop it a couple of times [lauren] and just push the mash down the sides [lauren] to get it well combined [lauren] it's kind of like the consistency of egg salad sandwiches, [lauren] like this. [john] kay, edamame mash done. [john] that was super quick. the cool thing about this is [john] you can make all three of these, [john] you leave em in the fridge, [john] and throughout the week, you kinda just [john] put your sandwiches together and you're like [john] "monday i feel like edamame mash" [john] "tuesday, what are we gonna have?" [lauren] chickpea tuna! [john] chickpea tuna. [john] i hated tuna salad as a kid. [john] i like, [lauren] it stinks [john] could not stand it but [john] this is gonna be better [lauren] well actually you know you're in the lunch room [lauren] and you bring out your tuna sandwich [lauren] and everyone's like "ew!" [john] everyone was like [lauren] kay, well now you can bring out chickpea tuna [lauren] and ain't nobody know what's happening. [lauren] so for the chickpea tuna [lauren] you're gonna drain and rinse a can of chickpeas, [lauren] the small can, like a 15 ounce can. [lauren] and then take your potato masher, [lauren] if you have one, and just mash them up. [lauren] you could also go through the food processor, [lauren] um, to just get them broken up. [lauren] i like it a little chunky, so that it's still like real tuna. [lauren] you're gonna use a third of a cup of vegan mayonnaise, [lauren] a tablespoon of lemon juice, [lauren] a quarter cup of finely chopped red onion, [lauren] a third of a cup of finely chopped pickles, [lauren] third of a cup of finely chopped celery, [lauren] quarter teaspoon of sea salt, [lauren] and a quarter teaspoon of ground pepper. [lauren] half a teaspoon of old bay seasoning, [lauren] and now you're gonna stir to combine all this. [lauren] chickpea tuna. [john] tuna's gross. [lauren] i used get made fun of for bringing whole grain bread to school [lauren] instead of white bread. [lauren] it's insane. [lauren] so the next sandwich filling we're gonna make [lauren] for your week back to school [lauren] is a curry chik'un salad. [lauren] this is actually inspired by the vegan curry chik'un [lauren] you can get at whole foods at the deli counter, [lauren] if you've ever gone, it's so good [john] it's so good. [lauren] so we're gonna try to recreate it for you. [lauren] for the curry chik'un salad, you're gonna heat up [lauren] two and a half cups of chopped vegan chik'un, [lauren] with two teaspoons of oil [lauren] and add salt and pepper to taste. [lauren] browning it just brings out extra flavour [lauren] than if you just took it right out of the package [lauren] make sure you allow the chik'un to cool [lauren] before you add the mayonnaise. [lauren] add half a cup of vegan mayo, [lauren] half a cup of finely chopped celery, [lauren] a quarter cup of raisins, [lauren] half a teaspoon of onion powder, [lauren] one teaspoon of curry powder, [lauren] and a quarter teaspoon of paprika. [lauren] then give it a stir and combine it really well. [john] there we have it. [john] the curry chik'un [lauren] it tastes exactly like the one in whole foods, [lauren] i will say [john] you could even, if you didn't want to do bread, [john] you could do it on a salad or something [lauren] yes, you could do a bed of greens, i think that's a good idea. [john] we're not gonna do that [lauren] no, we're all about the carbs. [lauren] so toast the bread to kind of keep your sandwich from getting soggy, [lauren] if you're making it in the morning, [lauren] and you're gonna eat it, not till lunchtime, [lauren] so we're toasting our bread, [lauren] we're gonna put these sandwiches together [lauren] with various toppings to give you some ideas [lauren] but you could literally put anything you want on them. [john] you're in control of your own [john] sandwich destiny. [lauren] so there you have three really easy sandwich fillings [lauren] you can make for back to school this week, [lauren] or if you're an adult, [lauren] you can do it for back to work. [lauren] or if you're a college student, [lauren] whatever. [lauren] bring your lunch to class. [john] everybody's [john] everyone's gotta eat lunch. [lauren] exactly.
