We're going to pull the power back nose down and put you down the water.

You mean like we're going to glide in baseball planes?

I'm in Tasmania, an island of the southern tip of Australia.

I've heard Tasmania's remote and pristine environment is home to some of the freshest ingredients in the world.

So I'm starting my adventure in the southeastern corner of the island on the wild and sparsely populated Forester Peninsula.

Now, I'm here to meet a very talented local chef, Annalise Gregory, who's going to show me this stunning paradise and hopefully get me up to speed with some of the finest ingredients Tasmania has to offer.

But first, I'm hoping these guys who clearly look like they're getting ready for something special, can point me in the right direction.

Annelise Gregory is a culinary nomad who's trained with some of the world's best chefs in France and the uk.

Having finally set down roots in Tasmania's fast emerging food scene, Annalise has embraced the island's ocean to plate lifestyle, diving in head first.

So this is your back garden, literally, right?

Literally just what, 50 meters, 60 meters out?

Sometimes they're only like a meter below the surface.

Aboriginal culture is a hugely important part of Tasmania.

And they want to welcome you to Tasmania properly.

The indigenous Tasmanians have lived off this land for over 35, 000 years.

Despite years of colonial oppression, their culture and knowledge have survived.

First nations teacher Craig Everett and his three sons have offered to give me a traditional welcome to country.

So this is really important to let our old fellas know that you're allowed to be on Country.

And they'll look after you from this point on.

Feel them old fellas and that that are walking around us and with us and that as well.

Thankfully my size 15ft and I have dodged the dancing.

This welcome ritual involves three ceremonies.

A cleansing dance to get rid of negative energy.

A welcome dance to invite positive energy.

And a smoking to wash away the stress and worry.

Five, seven kids so I have a little bit of stress.

This potty mouth chef feels like an altar boy.

We'd actually like to put them lines on you if that's okay, Gordon.

The line he paints on my forehead represents me on this planet.

The line on my cheeks is my path to learning.

The incomplete line means I still have some work to do.

What a welcoming for a 6 foot 2 white Scottish man.

That positivity they want to throw on you.

You start to understand the heritage on this island, what it means to the culture.
