What do you get when fish, cassava, and peanuts join forces?

The fish is not just a part of the fish, it's the whole fish.

The use of everything of the fish, minus the intestines.

Meet Francis Toya, the mastermind behind the Samaki cookie, a magical bite-sized solution tackling malnutrition in pregnant women and children.

Nobody could think of coming up with a snack from fish.

It is magic because of the so many problems that it raises.

Each morning, long before the bustle begins, Francis makes his way to the shoreline, hand-picking the freshest fish of the day.

We'll admit, it's an unusual start to a cookie recipe, but then again, this is no ordinary cookie.

So from the beach now we come to process the fish.

So we stack the intestines, so then now we spray the fish.

We put it in our oven, high temperature, around 90 degrees, so then it can dry.

After the fish is dried, take it to the blender, now we crush it into powder.

Now that our fish is prepped and ready, here's our full list of ingredients.

Cassava flour, freshly grated coconut, ground nuts, aka peanuts, cashew nuts, icing sugar, and margarine.

Add the cassava flour now, then you add the coconut, ground nuts, you grind the ground nuts into powder, and then you also add cashew nuts.

To maintain some sweetness, you add the icing sugar, and after that, then you mix, then you use margarine.

After doing that, then you use a pipeline to make the shapes of the snack, and eventually put them in an oven.

Like 45 minutes, the snacks are ready for consumption.

When I was reading about fish, then I bumped into reports of so many problems, especially the nutrition in Kaleifi, and I just wanted to understand whether fish can really fit to pursue this kind of a problem.

When I was building up my idea, I was still a student at the university.

After years of mixing and baking, Frances finally landed on the magic recipe.

Enter Pawnee University, where, to their surprise, this idea came from a sociologist.

Which was quite strange to me, because I believed that this innovation should have come from a nutritionist.

I looked at the ingredients, and what struck me is that they were local.

What we are developing is a health supplement.

It's not just a healthy snack, it's a food supplement.

It is meant to correct our nutritional deficiencies.

When it comes to nutritional analysis, the biggest benefit of this cookie is its level of protein content.

So you can solve a problem without even realising it, just by eating this cookie.

Like all the time I feel there's a problem, I usually go out and make sure, if I cannot solve it 100%, but at least there's my contribution in that.

And that has really given me all the strength to move over.

We must fulfil the vision of eradicating malnutrition in Africa once and for all.

We are in a society where we need each other.

So that is the only thing that drives me every day.

I just feel I have the passion to make sure that there's a change that I'm bringing to the community.
