All right, my guy, best pizza in Los Angeles today.

We're eating like kings and we're starting right here at Pizzeria Bianco in the downtown LA area.

I'm gonna get us one of their margarita pizzas, aka a cheese pizza.

Has a little basil on there, of course, fresh mozzarella.

We're doing a lot of different styles of pizza today, starting with this one.

I guess you can kind of put this somewhere in the neo-Neapolitan style.

Also gonna get some sort of specialty pizza they have here.

I think a margarita cheese pizza, great baseline to have.

And then if they wanna put their own little twist on there, I'm okay with that too.

I see what you mean about that kind of neo-Neapolitan style.

Because it looks kind of like it's got the puffy crust of a Neapolitan.

But definitely a much more firm kind of consistency and texture.

I think that's where it differs from a standard Neapolitan.

On a regular Neapolitan, the crust wouldn't get quite this crispy and crackly.

But I actually really like the taste and the texture with everything else that's going on.

I mean, we've seen them like wheeling in enormous carts full of wood.

You can tell they're just stoking that fire so well.

They're keeping the temperature nice and high.

And it does almost have like a lovely, rich, hearty smoke flavor on it.

All the ingredients you're getting in the pizzas here are locally sourced.

The dough is made fresh and ferments for I think 18 hours.

There's just this relentless high standard that they have here for everything that's going in this pizza that ends up on the plate.

You can clearly taste the difference, right?

The tomato sauce tastes very fresh, light, a little bit of sweetness to it.

It's got that acidity that I really want.

Because again, it's like got that creaminess, a little bit of texture, but not like stringy in any way.

Yes, this one has red onion and- Pistachios.  Have you ever had pistachio on a pizza before?

I've never had pistachio on a pizza before.

You get the rosemary, really like herbaceous flavor.

I got to be honest, like typically I won't opt for a white pizza when I go out.

Because for me, like I just love the flavor of a good tomato sauce so much.

They said they like take it out halfway through and then add the pistachios.

So they really don't have that kind of like burned or like acrid flavor that you can get if you overwork nuts like that.

Just like a very gentle, nutty sweetness.

One of the distinct things about what was considered Californian style pizza, at least decades ago when it was first named, is a dedication to fresh, hyper-local, fun toppings you wouldn't normally see in a pizza.

You know, taking the wealth of organic food and produce that we have in this part of the country and putting it on a pizza.

You've got a beautiful climate down here in this part of the world.

Do you have a strong preference between these two?

The classic margarita versus the slightly more new-school pizza?

But I'm so wowed by the pistachio one that this is the one I'd be like, you have to get it.

Very much the surprise package for pistachio, but yeah.

I do think that just a margarita is kind of the best way to judge the quality of a pizzeria.

I think if you can't do the basics right, then I don't trust you to do anything else with pizza.

And they are absolutely nailing the basics and also doing some fun stuff as well.

I wanna point out too, in America, we're so regional about our pizzas and it's always been this joke, like California, and especially Los Angeles, doesn't have good pizza.

They don't have pizza that has to be on the East Coast and New York and the water and it's nonsense.

It's not even great pizza anywhere in the country.

We all have access to purified water and cheese and it's clear there's a commitment to the best ingredients and really focus on making the best pizza you can.

I would personally love to sit here and finish off both of these pies, but if I know anything about food tours, I know that we've probably got some more spots to hit.
