  • I love steak. And I love fizzy cola. And I'm a fan of BBQs, so why not combine all three.

  • So this BBQ beef steak uses rump steak

  • and we're going to marinate it in smoked paprika, chilli, tomato purée and cola.

  • You're going to serve it with cola?

  • No no, marinate it IN the cola. Okay?

  • It will all become very clear... easy peasy. He's had one of those moments again.

  • Jamie...

  • Peel and slice the onion.

  • Barry, peel and crush the garlic and do the same to the chilli. Just kind of slice them all up.

  • I'm going to put a glug of oil into the pan. Now, let's go back to this marinade

  • Just what on earth are you thinking? Coke!

  • It's great at a BBQ... as a drink. Have you ever seen the experiment

  • where they put a tooth in a glass of coke overnight? Yes... and the

  • tooth isn't there in the morning.

  • It completely dissolves.

  • We're going to do that to our steak, and it really tenderises and changes

  • The texture of the beef before you cook it. Jamie, can you put all of the onions in there. Mind your fingers on Barry's knife.

  • quite a high heat on those because we want to colour and soften them at the same time.

  • No no

  • That's quite hot. Erghh... all over my kitchen floor. That's a really hot chilli.

  • That was really mean Ben. Have a sip of that.

  • Chilli can go in there as well.

  • With the garlic.

  • Season up our onions at this stage.

  • While we wait for the onions to soften

  • We can move onto our jacket potato which we're going to serve with it. Cut the potato in half.

  • That gives you nice flat sides and we're going to cut criss-crosses into it

  • keep your fingers out of the way. Why is that?

  • because when we bake it we get a fantastic presentational effect.

  • Then put them onto a tray

  • and Barry, put salt and pepper onto them and a glug of oil.

  • Can you cook these on the BBQ?

  • You're best off starting them in the oven

  • but then you can always transfer them to the BBQ to keep warm with everything else.

  • So if you can do just that Jamie. 180 degrees C in to our oven.

  • Now our onions have softened up

  • you can see all those fantastic flavours and you get that chilli aroma as well,

  • we can add everything else.

  • So some smoked paprika

  • a little bit of tomato purée. Cool.

  • And some soy sauce. If you can maybe get a spoon out and

  • give that a bit of a stir round.

  • and now we're ready to start marinating our steak.

  • It smells incredible... so BBQ-y. So smokey, and that's the smoked paprika. You get that BBQ flavour.

  • So this is rump?

  • Correct. The backside of a cow.

  • Which I like because it has marbled fat and a nice bit of fat on the side, which will crisp up on the

  • BBQ a treat. Barry if you can put our onions in there.

  • And this is where our sneaky trick of the cola comes in.

  • Now all of the fizz and all of the sugar mixes with all the smokey and spicy flavours and then our steak...

  • there is enough marinade here for a number of steaks but we're just going to demonstrate it with one. That goes in there.

  • It's not going to cook it,

  • as the coke was cold. But it will start to marinate and tenderise the beef.

  • And you can use any kind of cola for this?

  • Any kind of cola, and any kind of steak.

  • Now that needs to be left to marinate. The longer the better. Perhaps over night.

  • But at least two or three hours.

  • So we'll pop that to one side... although we do have one that we made earlier which we'll bring out in a second. Ahhhh

  • We need a really hot

  • cast iron griddle pan.

  • That's going to represent our BBQ because we haven't got a BBQ inside. Not allowed.

  • We're going to use this. If you guys have got a BBQ then please do use that.

  • And our last thing is our corn on the cob.

  • Another great BBQ treat. When corn is raw they are quite tough.

  • Make sure you've got a big knife, a solid board and you're going to hit down, keep your fingers out of the way.

  • Because you need to cut all the way through. What we need to do is wrap it up, so Barry if you can get a roll of tin foil. Yep.

  • Bit less than that. There.

  • Perfect.

  • I always prefer to double it up

  • If you're putting it onto a BBQ. Corn on the cob, salt and pepper.

  • Barry, Butter. Bit on each cob.

  • Then we need to fold it up

  • and make it completely airtight.

  • So that again it's going to half bake and half steam.

  • Then it can go onto the BBQ.

  • So our potatoes need about an hour in total in the oven. This needs just 20 minutes

  • and our steak which we made earlier we can start to grill.

  • So look, you can see that the steak that's been in there

  • for about six hours now has completely changed it's texture. It has. A grainy texture.

  • Almost like corned beef. What we do have though is a searingly hot pan so just take that over and put it

  • straight in there. Corrrreeee!

  • That is one fantastic sound... a proper BBQ going on there.

  • What's great about the marinade is that you can use it later on to serve with the steak.

  • But of course you've got to heat it up to get rid of any raw beef-ness.

  • Oh... so we don't want to drink it? You don't want to drink it. So

  • put it into a pan

  • and bring that up to a bubble at the same time as cooking your steak. The steak needs a couple of minutes on either side.

  • The marinade needs to bubble.

  • Our potatoes and sweetcorn need to finish off in the oven.

  • And then, it'll be BBQ time.

  • Look at that, so you can see the steak now... nice and soft. This can of course

  • all be finished on the BBQ. But now I think is the time to serve up... so one of those fantastic

  • potato halves. You can see the criss-crosses now.

  • Some sweetcorn. The steak itself... the star of the show. And then some of those onions as well

  • because they are soft, sweet and spicy.

  • And there you go... that is our BBQ. We made it inside, but it can all be done outside

  • It's the cola BBQ Beef... SORTED!

  • Oh wow! Smokey flavours.

  • It's strange, you can't taste coke.

  • But you can recognise it.

  • It's got that syrupy richness to it. Yeah it has.
