  • - Hi everyone, it's Natasha of natashaskitchen.com,

  • and today we are making the easiest,

  • Mexican-inspired chicken casserole

  • covered in a bubbly cheese sauce.

  • Everyone needs an easy chicken casserole recipe.

  • (upbeat music)

  • This recipe moves fast so go ahead

  • and preheat your oven to 400 degrees fahrenheit

  • and butter a nine by 13 casserole dish.

  • (laughs)

  • Next, you'll need two pounds of chicken breast.

  • I have four small chicken breasts here

  • and I've trimmed off any excess fat, cut those in half.

  • It is important not to use too much chicken

  • which will overload your casserole dish.

  • This recipe is easy to scale-up,

  • so if you do wanna double the recipe,

  • make sure to increase the sauce proportionally

  • and use a larger baking dish.

  • Season both sides of your sliced chicken

  • with salt and pepper.

  • Once the chicken is prepped, we can fire up the stove.

  • Place a large pan over medium heat

  • and add two tablespoons of oil.

  • Once the oil is hot, add the chicken in batches,

  • and cook for about three minutes per side

  • or until golden and cooked through.

  • Also, if you don't have one, I love this oil splatter guard

  • and I'll leave a link to it below,

  • but it keeps my stove and me clean and safe.

  • Also make sure you don't overcook the chicken.

  • Saute until it's just cooked through

  • or until it's reached a safe 165 degrees fahrenheit.

  • Repeat with the second batch of chicken,

  • adding more oil as needed.

  • Arrange your sauteed chicken in the buttered casserole

  • so they're laying flat

  • and overlapping as little as possible.

  • Now to make the super-easy three ingredients sauce.

  • In a medium mixing bowl,

  • add 14 ounces of diced, green chilies with their juice.

  • Next, add two cups of shredded Mexican cheese

  • and one cup of full-fat sour cream.

  • Stir those together until they are well combined.

  • Pour and spread the sauce evenly over the chicken.

  • And last but not least, sprinkle the top evenly

  • with one cup of shredded Mexican cheese.

  • Then bake in a preheated oven at 400 degrees fahrenheit

  • for abour 15 minutes or until the cheese is melted

  • and the sauce is bubbling at the edges.

  • (laughs) All right, hot, cheesy, creamy perfection.

  • And I am ready for this taste test, who's with me?

  • (laughs)

  • All right, and then I love to garnish this

  • the same way you would enchiladas.

  • So I've got some freshly diced tomatoes,

  • some avocado and of course cilantro.

  • So we're gonna top that generously.

  • Right, and avocado goes on everything I can put avocado on.

  • (laughs) Where are my avocado fans?

  • Lots of avocado.

  • And then, last but not least, fresh cilantro.

  • Mm, doesn't that look tempting?

  • I'm excited. (laughs)

  • Okay, and now the moment I've been waiting for,

  • the taste test, so here we go, dive right in here.

  • Oh, oh, oh, this is so saucy and creamy.

  • Yum, mm.

  • And, the taste test.

  • Mm, the chicken is tender,

  • got that cheese pull going. (laughs)

  • Mm, and it smells really good.

  • (satisfied moan)

  • I love how those diced green chilies

  • give this really good Mexican flavor.

  • Totally satisfies the craving for Mexican food. (laughs)

  • And can you believe how easy this is?

  • Everybody needs a good, easy chicken bake.
