  • Hi everyone and welcome to Nicko's Kitchen once again.

  • Today we are doing a request.

  • I've got a request the other day for a chocolate cake.

  • I love chocolate cake, everyone around here loves chocolate cake,

  • so, I thought, you know, I'll make some.

  • But, I don't make ordinary chocolate cake.

  • So, today, we are gonna turn the volume up and we are gonna

  • make a delicious chocolate mud cake.

  • (Intro music)

  • Okay guys, chocolate mud cake, it is to die for, let me tell ya.

  • Now this is what you're going to need.

  • We are going to need some castor sugar, 2 eggs,

  • 250 grams of unsalted butter, you're gonna need some dark chocolate,

  • with at least 70% cocoa, okay,

  • the darker the chocolate the better for this.

  • But 70%, say, is a pretty good one to use for this one,

  • so just about 70, don't go any higher than that.

  • We've got some cocoa powder,

  • we've got some plain flour,and some self rising flour.

  • okay, what we are gonna to first is we are gonna take our butter

  • and chocolate and we're gonna go over on a saucepan

  • and I am going to show you how to make the gooey sauce

  • that's going to make this mud cake unbelievable.

  • Okay folks, so what we are doing, we are gonna melt our butter down

  • in a saucepan and, we are gonna to add in our chocolate, okay,

  • which I've just chopped up, okay, and we've got some castor sugar here,

  • and I am also gonna put in some water.

  • Now, I know I've said before about mixing chocolate and water together,

  • that you've got to be very careful, that it doesn't split,

  • because it would ruin the chocolate.

  • The secret to this is getting everything on a medium temperature,

  • and melting everything down together.

  • A mud cake is all about being moist, it's a very very moist,

  • dense, chocolate cake. And you do need water.

  • A lot of people put them in water baths, and all this sort of thing,

  • I don't, I put the water straight in to the cake because it makes

  • it so much moist than your ordinary cake.

  • So, we are gonna melt the butter down as we are here,

  • and we are going to put our chocolate, our sugar in

  • and our water. We're gonna mix it all. Keep stirring it for 3 or 4 minutes,

  • on medium to low heat. And then we'll show you what to do next.

  • okay guys, as you can see our mixture here is just about dissolved.

  • The butter is just about to completely melt, and see here,

  • it is like nectar from the gods, it is absolutely gorgeous.

  • So I've put it to one side, and let it cool for 10 minutes.

  • Okay guys, so we've let our chocolate mixture cool in the bowl.

  • This was the dark chocolate, butter, the water,

  • and the sugar that we dissolved down.

  • Melted the butter in the pan. We've let it cool for about 10 minutes,

  • and so we are going to put our eggs in now.

  • So I'll just grab a whisk, and we just want to put two beaten eggs,

  • straight in there, like that. Just give it a good mix.

  • We just wanna sift in our plain flour, which in 1 and a half cups.

  • Sift that in, just like that.

  • And we also want a quarter of a cup of cocoa.

  • Again, just sift that in.

  • Okay, just straight out the top.

  • Just like that. Any large bits, just get a spoon and work them through.

  • Just like that. Now we are going to fold this in,

  • until it forms a nice cake mixture.

  • okay, so that's about the consistency we want,

  • okay, just a nice, thick, gooey, thick cake mixture.

  • Okay, just like that.

  • Doesn't that look absolutely gorgeous.

  • Now, what I want you to go and do, is preheat the oven.

  • You are going to have a preheated oven of about 190 degrees.

  • Which is not very high for a cake, but it's going to be cooking

  • for a long time. We are going to cook this for about a hour

  • to an hour and a half, so it's going to be a long time cooking in the oven.

  • Now, go and get a cake tin. I'll just show you mine.

  • I've got one of these springform cake tins, they are fantastic,

  • I love them, but you still got to grease it. If you were going to

  • use an ordinary cake tin, just get some baking paper and line it

  • and butter it as well.

  • Okay, you just want to grab your cake mixture

  • and pour it straight in like that.

  • Then you just wanna make sure it's all nice and even,

  • all the way to the edges, you don't want a big bit in the middle,

  • push it all the way to the side.

  • Make it as flat as you can, because we are going to ice this later

  • with some beautiful chocolate icing.

  • It is actually called a chocolate ganache,

  • which is what we are going to do later on.

  • Alright, that goes into an oven. Preheated oven, 190 degrees,

  • and that is going to be beautiful.

  • Okay guys, what I've done here,

  • I've just put our cream and our chocolate in, okay,

  • and we are going to make our chocolate ganache.

  • Now, a chocolate ganache is an icing

  • we are gonna use for the topping on our cake.

  • So we are going to melt this all down, with the chocolate and the cream,

  • we are gonna transfer that to another bowl, to cool, and we are

  • gonna put it in the fridge for about 30 minutes.

  • Okay, until it becomes nice and thick, until that chocolate thickens up again,

  • and then we are going to be ready to ice our cake.

  • Okay guys, so we've got our cake out,

  • let it cool and our icing is cool as well, our chocolate ganache,

  • and we are just gonna pour it straight over the cake,

  • and I want it to run off the cake.

  • So don't worry about the mess that's gonna cause

  • and all that sort of stuff, we can clean it up later.

  • But I just want this beautiful, smooth chocolate ganache,

  • just, over the top there like that, okay.

  • And let it run down, because it give it a beautiful, homemade look.

  • I want to show you a little trick. Now, we're going to decorate

  • this with some chocolate flakes.

  • So, I've got some really good Belgium milk chocolate, just get an ordinary

  • vegetable peeler and just on the side,

  • I want you to just grate the chocolate.

  • So just keep doing this because we are going to put

  • this all around the edge of our cake and make it look

  • even more delicious than it already is.

  • Flakes we've just done, and just sprinkle them

  • around the side, okay, just like that.

  • This is looking beautiful.

  • And there you go guys, Nicko's mud cake.

  • It is absolutely dead sexy,

  • you can see there it's all nice and moist in the middle,

  • it's absolutely fantastic,

  • our icing, our shaved chocolate on the side,

  • hmm, I wish you guys were here to eat it.
