  • Hello! Today we are making gyoza

  • Or pierogi, ravioli, dumplings, potstickers, whatever you want!

  • You start with a tiny ball of clay

  • and the you pinch the ends to get them pointy

  • pinch the top so you create a thin ridge

  • Use a ball ended tool to better your ridge and overall gyoza

  • Now you want to add the pleats on one side

  • Use a tool that has a thin edge : blade, pin, exacto, sculpting tool...

  • Remember, gyoza have pleats just on one side

  • Smooth down the pleats with a small ball ended tool.

  • Bake the gyoza, and make a mold using a silicone putty.

  • I'm using siligum from gedeo.

  • Push down the clay in the mold

  • Cut out the excess

  • Using sandpaper, give it some texture

  • Color with dry pastels

  • This is for the fried gyoza which have a crispy browned side.

  • Replicate some "plain" ones

  • As in, before cooking.

  • After baking, add some extra acrylic paint for more crispness

  • Add a layer of varnish, as fried gyoza are very shiny.
