Tell me a little bit about how close is Kochi from Osaka

Yeah, we're taking a we're going today. We're taking a Shinkansen to Okayama. So that's about what about an hour, right?

And then from there, it's I've heard it's a two-hour ride down to Kochi and it's very beautiful is what I've been told

Awesome before we start and we start bringing out some of the food because it's cooking and right now I can smell it

It's really really good. I want to show you a little bit about Kochi Prefecture. Where exactly is this place?

Which to me is a really big place, there's 47 prefectures four of them are on this island that looks like mini Australia, doesn't it?

Kochi is the one on the south. I'll show that to you in a second

Shikoku has been listed as the sixth most popular most beautiful region in the world by Lonely Planet recently

What makes Kochi pretty interesting is for people visiting the Kansai region, Osaka and Kyoto

You can get here pretty quickly. The proximity is close

The two bridges over by train and we're gonna drag you down to Kochi Prefecture right here on the south part of the island

And we're gonna pull you in here and check it out

You can see Kochi Castle on the bottom left and Kochi Station on the top right

Check it out. It's got a lot of history here and walking around it

It gives you another perspective on on Kochi City because it's such a natural place Kochi City's got some pretty cool attractions

Like the one I'm about to show you in a second if we pan down here we follow this old street where one of Japan's oldest street foods markets or

Festivals goes on every Sunday. This market is what the oldest in Japan

I think 400 years old of history and I'll be live-streaming here on Sunday

We're gonna pan out and check this out. This restaurant is called Tosa Shimizu. Where exactly is this place?

Right here is Tosa Shimizu. It's such an isolated place

Not gonna find a lot of tourists which makes it perfect for anyone who's looking for great seafood to get off to the beaten path

That's the food that we're gonna be eating today from this region

So I've asked them to ignite the fire during this live stream. We're gonna be talking to a lot of people here

I asked earlier if they could raise their hand if they've been to Kochi Prefecture and surprisingly about 30% of the people had raised their hands so we're gonna get a chance to talk to some of them and

It's also katsuobushi is made from this fish, which is the hardest food in the world

It's the shaved fish flakes that you'll see on top of takoyaki and okonomiyaki. That's dancing

So we're putting salt on it, okay, this is a katsuo fish which is bonito

So we have here is called water and water is what straw

So here I've never seen this done before and what we do here is a

Get the straw burning and use that to sear the bonito the katsuo

Hey, so now he's setting the water the straw on fire and leave this up come the flames

Move around and move the katsuo around a little bit just it doesn't burn in one place

Need more water. Okay, it's hot in here real quick. It gets hot

So see we're just just searing the outside just quickly

More straw and then let's go through a lot of straw here

I'll just imagine what it's be like in summer. Hey, so that

So just the outside gets seared and that's just beautiful stuff got some tataki

They cut it very thick here in Osaka. We have a lot thinner but here they cut it very thick

And this is going to be absolutely delicious
