  • - Hi, I'm Katherine Heigl

  • and this is everything I eat in a day.

  • I'm typically getting up around 7:30-ish,

  • which I'm really liking,

  • just maybe because the house is so quiet.

  • I do not brush my teeth until later

  • 'cause I have my cup of coffee first.

  • And I think it would be gross

  • if I had toothpaste mouth with coffee.

  • So I start with my coffee in my keeping room

  • that has my little fireplace in it,

  • three out of eight of my dogs.

  • Sometimes I do this really cool little journal thing

  • and then a mantra for the day.

  • Sometimes I pull my tarot cards

  • because I'm kind of witchy like that

  • and I really like witchy stuff.

  • Always call my mother every day, twice a day.

  • I typically do not eat until 11-ish

  • and I'm really enjoying Frosted Mini Wheats.

  • I love them so much and I can't stop eating them.

  • And everybody gets mad at me

  • because they think I need to eat something more well-rounded

  • or healthy or has protein or whatever.

  • But I'm telling you, they really work for me.

  • Oh, and I use Lactaid, which I'm also really enjoying

  • because I have not been able to drink milk

  • since I was like 14.

  • So, Josh is our big breakfast maker

  • and he's an excellent breakfast maker,

  • so I just let him do that.

  • That's my gift to him

  • is allowing him to make all of us breakfast. (laughs)

  • It's typically eggs.

  • Like, he's really good too with, like, eggs over medium,

  • which I really love.

  • And bacon, I can't have eggs without bacon.

  • I think that's weird.

  • I do love a good egg scramble.

  • Like just cheese, tomatoes, eggs, Tabasco. Yes.

  • Now I'm getting hungry.

  • So, that's breakfast.

  • Because I eat breakfast late,

  • I probably don't eat lunch till two-ish.

  • So I live in the middle of nowhere

  • and I can't order anything in.

  • I can't, like, run to a smoothie bar and get a smoothie,

  • I have to make the smoothie.

  • I can't get like a pasta salad or a hamburger.

  • I have to make it

  • and then I have to clean it up and put it all away.

  • So you get to a point and if the kids aren't home

  • and they're at school, you're just kind of like,

  • I don't wanna bother.

  • So I might have another bowl of Frosted Mini Wheats.

  • I do drink tea and because I love herbs

  • and I love healing herbs and plant medicine,

  • I love to make my own teas,

  • though I haven't quite nailed that down yet.

  • Sometimes they're really disgusting, but I'm getting there.

  • Josh is also, he tends to feed me a lot.

  • This has been kind of eye-opening for me. (laughs)

  • He makes the best sandwiches. He goes all out.

  • I'm the kind of person who's like, all right,

  • just throw me some bread, some bologna

  • some cheese, some mustard, some tomato, that's fine.

  • He does, like, the lettuce, the tomato, the sliced onion.

  • Makes an aioli at times, like, takes a lot of pride in it.

  • Anytime I have to go in for groceries

  • or any of that sort of thing,

  • we make a day out of it and have lunch

  • 'cause my mom and I do everything together.

  • We go to this great Italian restaurant in Park City

  • called Bartolo's.

  • It's simple, but really good homemade pasta, great salads,

  • like this burrata and beet salad that I crave.

  • Quick, simple, delicious lunch. I also love sushi.

  • There aren't like tons of sushi places in Utah

  • but there are a couple really exquisite ones

  • down in Salt Lake.

  • So if I'm gonna make the trip down to Salt Lake,

  • which is a good hour drive,

  • I always make sure we plan for Chop Fuku.

  • I think my favorite, favorite favorite is uni,

  • which is shocking and surprising

  • because when I was in my early twenties,

  • I wouldn't have touched it with a 10 foot pole.

  • Honestly, the more children we had, the earlier dinner got.

  • They come home from school,

  • they start trickling in at about 14:30.

  • Well now my oldest daughter is in a dance class

  • that sometime doesn't get out till late.

  • So we used to eat together at about 17:30, I would say,

  • because they come home from school hungry and it's later.

  • Like, Joshua comes home at 15:30,

  • that's too late to like have a big snack

  • but it's way too early for dinner.

  • So I'm trying to, you know, get them to hold off till dinner

  • because if I give them a big snack, they will not eat dinner

  • and then it's a fight and I don't wanna fight at dinner.

  • We just started moving it up earlier

  • so that everybody would be hungry and eat

  • and we could eat together.

  • Poor Naleigh has to eat alone

  • when she comes home from dance though.

  • We save her a plate.

  • I go through my phases of being really kind of a health nut

  • and really going for, I did a whole plant-based thing

  • for a while

  • but I haven't found a way to really sustain that.

  • Instead, I've kind of moved more towards just embracing

  • whole foods and just kind of well-rounded meals

  • and maybe trying to eat a little less of it

  • if I wanna drop a few.

  • My dairy issues are confusing

  • because I can't just drink milk,

  • but I can have, like, half and half or cream.

  • I can't eat ice cream, but I can eat cheese.

  • Bell peppers. Can't do it, I hate them.

  • I think they ruin a meal and a lot of people love them,

  • and unfortunately my children will never know

  • because I refuse to buy them.

  • I don't want them in my house. They linger on everything.

  • Even if they're sitting next to something

  • and you don't eat them

  • but they've touched the food you are eating,

  • you can taste them.

  • They're so pervasive and I don't like that

  • it overpowers everything else.

  • And I will be burping them up for days.

  • That can't be good for you.

  • And then dinner is typically my terrain.

  • Like, now at this time of year for us,

  • we're doing a lot of crock pot chilies, a lot of stews.

  • Oh, we have an air fryer.

  • We do a lot of salmon in the air fryer.

  • I'm really a big fan of the pressure cooker.

  • I do a pumpkin Turkey chili that's so delicious, so easy.

  • It's from the Skinny Taste Cookbook. I love that gal.

  • That's my favorite go-to.

  • My kids love that. My husband loves that.

  • I can make it super spicy for me

  • by adding jalapenos if I want to

  • and everybody else can have it mild

  • if they want it that way.

  • My other favorite and super family favorite

  • is Spaghetti Bolognese. We do a lot of that.

  • Now, I used to make my own sauce,

  • now I use Rao's jarred sauce. (laughs)

  • Oh, and Meatloaf.

  • I have my mother's Meatloaf recipe

  • and it's my all time favorite meatloaf.

  • I've never had another meatloaf that I love more than this.

  • So easy.

  • It takes maybe 10 minutes to prep

  • and then just takes about 50 minutes to bake.

  • I like to cook. In fact, sometimes I love to cook.

  • Especially for like a special occasion

  • or a specific reason or to host.

  • But daily cooking, in and out, in and out,

  • all day, every day, because you're prepping, cooking,

  • cleaning, it's a lot, and I get really burned out

  • and don't wanna do it.

  • For somebody who doesn't want to deal with food,

  • I really love food.

  • So if I am in any city or anywhere where there's easy access

  • to a million great places to eat, that's what I want to do.

  • I don't necessarily wanna tour the ruins.

  • I wanna go to a great restaurant.

  • This little visit to New York has not let me down.

  • Food is excellent. (laughs)

  • Here, I'm very excited to dive into some Indian food.

  • I have not found great Indian food in Utah

  • and I love Indian food.

  • So I have to make it if I want to eat it,

  • but not in New York.

  • I love chicken tiki masala. I make a lot of that.

  • I have some great recipes for it

  • that are probably not as authentically amazing

  • as a restaurant version, but doable.

  • Yeah, that's my go-to. That's my favorite.

  • That's what I always order.

  • Butter Chicken, I also really love.

  • But I like it spicy as hell.

  • I never used to be much of a sweets person

  • but now every night after dinner I have to have a FatBoy.

  • Do they sell those here or is that just a Utah thing?

  • They're called FatBoys and they're ice cream bars.

  • They're amazing and they're small, so it's not like,

  • you know, I'm not eating 4,000 calories worth of them

  • but I still want it.

  • And then some of my favorite nights though

  • are just a cheese plate, like a charcuterie.

  • I love nice cheese too. I love really stinky cheese.

  • Like, the kind of cheese that you open your fridge

  • and you're like, my God.

  • Like a peppered salami or calabrese, like the spicy salami.

  • Again, I like cheese plates or charcuterie

  • and a glass or two of wine.

  • Since it's hard to go out, we have to make them.

  • But I have several favorite drinks.

  • You know, I'm not that picky.

  • Though, my all time favorite is a dirty vodka martini.

  • I do love a Negroni

  • and I do love something called a Martinez.

  • And I feel like not a lot of people know about this drink

  • but it is, I think, elegant and delicious.

  • I think Angels were singing Joy in a cup.

  • And it is equal parts, nice gin, sweet vermouth,

  • and then just a bar spoon of cherry liqueur,

  • a dash of orange bitters, shaken,

  • and drink it straight like a martini and it is awesome.

  • But if you mess it up, it's disgusting.

  • I've never been to a bar that makes them,

  • so you have to make 'em at home.

  • We have this beautiful 50 by 50 organic garden at our ranch.

  • I don't understand that a 50 by 50 foot garden

  • could actually feed our entire town.

  • I thought we needed it to be that big to feed our family,

  • but really you probably need a raised bed

  • that you could fit in your window sill.

  • So a lot of it, thankfully we've been been able to donate

  • to our local food bank and stuff,

  • 'cause otherwise it would've just been for the deer.

  • We're able to get like a lot of great fresh produce.

  • I feel like it's been a real privilege

  • to be able to have that.

  • I love having, like, fresh lettuces, even just iceberg.

  • I love iceberg lettuce.

  • Is like, the world against iceberg? I don't know.

  • And I love having like a simple salad too

  • with just radishes, green onions and tomatoes.

  • So I always have those things in my fridge.

  • I do that weekly grocery trip and have to do the meal plan

  • and have to do the grocery list and have to do the thing.

  • And I realized recently, again with my problem with excess,

  • I have so many cookbooks.

  • I love cookbooks and I love reading them

  • and I love beautiful cookbooks.

  • And so I get carried away,

  • and every week I'm trying new recipes and trying new dishes.

  • And then I hate my life because it's so much.

  • Like, I have to make lists,

  • I have to read all the ingredients,

  • I have to do this whole thing.

  • But if I would just make the things

  • I know how to make more regularly,

  • this wouldn't be such a big deal.

  • So, I'm learning. I make a lot more meatloaf now.
