  • - Hey everyone it's Natasha of NatashasKitchen.com.

  • Today I'm gonna show you how to make

  • one of my favorite cookies, they're called Pryaniki.

  • My mom makes these all the time.

  • Adults love them because there's zero oil

  • and zero butter and kids really like these too.

  • So let me go over the ingredients with you.

  • First things first, you're gonna preheat your oven

  • to 350 degrees Fahrenheit

  • and line a large baking sheet with parchment paper.

  • Next you'll need two cups of sugar, two eggs

  • and we're gonna separate those,

  • so you've got your two yolks,

  • 16 ounce tub of sour cream,

  • we have a teaspoon of baking soda,

  • half a teaspoon of vinegar

  • and then we have a little bit of salt, little vanilla

  • and then we need five cups of All Purpose Flour,

  • and for the glaze you'll need some powdered sugar,

  • your two egg whites, some lemon juice

  • and then some peppermint extract

  • and you're gonna wanna use this.

  • It makes the whole cookie tastes like peppermint

  • and it's wonderful.

  • So let's get started.

  • Start with adding your two cups of sugar

  • and your egg yolks to a mixing bowl.

  • You're gonna beat those on medium speed

  • until its kinda like the consistency of snow.

  • Next we're gonna add our 16 ounces of sour cream

  • and just whisk that together until it's nice and creamy.

  • (mixer)

  • Now mix your vinegar into the baking soda

  • and you'll see it get fizzy right away.

  • Give it a little stir to activate it

  • and then just mix the entire thing into the mixing bowl.

  • Then we're also gonna add our salt,

  • and vanilla extract

  • and then just mix that until it's well blended.

  • (mixer)

  • Okay, now we're gonna switch over

  • to our paddle attachment

  • and we're gonna add the flour just half a cup at a time,

  • to let it get fully blended

  • before we add the next half a cup.

  • And do that until all the flour's well incorporated.

  • (mixer motor)

  • Now you're gonna use about a heaping teaspoonful of dough

  • and I like to use these mini scoops

  • just because they're faster and a little less messy,

  • so with really well floured hands,

  • you're gonna take a full scoop,

  • cos you want the whole cookie to be

  • about the size of a golf ball

  • and just pop it into your hand.

  • Then again with well floured hands, roll it into a ball.

  • Then put it onto your prepared baking sheet

  • and flatten them out just a little bit.

  • Now you don't need much flour at all really for these,

  • just to keep them from sticking to your hands

  • and to able to form a nice ball with them.

  • And also you'll probably need to bake these

  • in two separate batches.

  • You're gonna space these about an inch apart

  • and then bake at 350 for 25 to 30 minutes,

  • just until they're barely golden

  • and then take them out right away.

  • While your cookies are in the oven

  • you're gonna make the glaze.

  • So start with your two egg whites

  • and beat them on high speed until they're foamy

  • and about tripled in volume.

  • (mixer)

  • Okay now you should've got that thick foam.

  • Next we're gonna add two cups of powdered sugar,

  • confectioners sugar,

  • along with a teaspoon of lemon juice

  • and a teaspoon of peppermint extract

  • and you're gonna mix that together on low speed,

  • just until it's nicely blended.

  • Alright, the glaze looks perfect.

  • Creamy and dreamy, ready for dunking.

  • And then our cookies just came out of the oven too,

  • if you wanna take a look at those,

  • they're just lightly golden on the top,

  • a little bit darker golden on the bottom.

  • They're ready to be dipped.

  • The best way that I know to spread the frosting on these

  • is to just use your fingers, so you dip them

  • and then you just spread it over the top.

  • Then we're gonna set them to dry

  • and once the tops are all dry,

  • you're gonna flip them over and just frost the bottoms.

  • Alright, the cookies are all done,

  • it's time for the taste test, here we go.

  • Yum, yum, yum, yum.

  • So, it's different than any cookie you've probably had.

  • If you haven't tried Pryaniki they're soft,

  • they taste like a cookie but they're soft

  • kinda like a cake almost.

  • So good and that glaze keeps them soft the next day.

  • So they're just as good the next day.

  • Yum, with milk of course.
