Today we are making chocolate oscars. Firstly you will need a mold, I got this plastic one
-
on ebay you can get smaller ones or the one large Oscar like I have.
-
Fill the mold with tempered chocolate, or if you don't want to temper then use compound
-
chocolate. There is a video on the channel explaining compound chocolate and tempered
-
chocolate and all of the different things that you need to know just click on How TO
-
cook That to go through to the channel and you will find those videos there.

Tap the mold and check there are no air bubbles especially in the little places like the nose
-
and things like that.
-
Turn it over and tip out some of the excess chocolate.

I going to fill the statue with popping sugar you could use ganache if you want to do that
-
you'd need to scrape the excess chocolate off the sides and let the shell set up and
-
then fill it with the ganache. There are lots of recipes for ganache flavours and other
-
fillings on the two truffles videos. If you're going for popping candy like I am
-
then scrape the excess chocolate into the mold, this mold has annoying little bumps
-
around the edge which is making it difficult to get all of the chocolate off.
-
Then top it up right to the top with more chocolate. And then run your pallette knife
-
over the top to smooth off the top and level it. Then you want to leave those to firm up.

Once they are set they should just fall out of the mold quite easily.

The reason I didn't make them hollow is they are so narrow at the feet it is hard to get
-
them out of the mold if they are hollow.

Stand the two halves up, if you look here they are not joining properly which is reflective
-
on the quality of the mold but I'll show you how we are going to fix it.

Warm a tray in the oven and place both halves onto the tray and then join both halves together.

Now to fix the gaps that we've got, add some extra melted chocolate and just smooth it
-
along the line to fill those in. Once that is all set take some edible gold
-
luster dust and using a dry paint brush dust gold over the whole statue including the base.
